Caesar salad dressing

    grape vinegar

    sugar
  • 3

    dry mustard powder
  • 1

    black pepper
  • 15

    dried parsley
  • 360
    ml
    olive oil
  • 40
    g
    Parmesan cheese
  • 5
    ml
    lemon juice
  • 3
    ml
    anchovy paste
  • 10
    ml
    chopped parsley
  • 3
    ml
    Worcestershire sauce
 

Method

 
Blend the first six ingredients in a food processor. Gradually add the olive oil in a thin trickle while the food processor is running and blend well. Pour into a bottle and set aside. Process the egg, Parmesan, lemon juice, anchovy paste, parsley and Worcestershire sauce in the food processor for about 30 seconds until well blended. Add to the basic salad dressing in a thin trickle while running the food processor. Pour into a clean glass bottle and seal with a tight-fitting lid. Refrigerate. Makes about 500 ml salad dressing.
