  • ANCHOVY DRESSING

    egg yolk

    Dijon mustard
  • sunflower oil
  • olive oil
  • salt and milled pepper
  • white wine vinegar

    anchovy paste
  • OTHER

    medium leaves cos lettuce
  • 6
    black olives
  • 3
    anchovy fillets, sliced lengthways
  • 6
    bread croutons
  • 3
    cocktail tomatoes, halved
  • 8
    half slices cucumber
  • 50

    Parmesan shavings
 

Method

 
To make dressing, shake all the ingredients together in a screw-top jar. Arrange lettuce on a plate and drizzle with dressing. Arrange black olives, anchovy fillets, croutons, tomatoes and cucumber slices around plate and garnish with Parmesan cheese.
