ANCHOVY DRESSING
1.00 eggs — yolk only
5.00 ml Dijon mustard
sunflower oil
fresh chillies — 573
salt and freshly ground black pepper
vinegar — white wine
15.00 ml anchovy paste
OTHER
8.00 lettuce — cos
6.00 black olives
3.00 anchovy fillets — sliced
6.00 croutons
3.00 cocktail tomatoes — halved
8.00 cucumber — halved, sliced
50.00 g parmesan — shavings

Method:

To make dressing, shake all the ingredients together in a screw-top jar. Arrange lettuce on a plate and drizzle with dressing.
Arrange black olives, anchovy fillets, croutons, tomatoes and cucumber slices around plate and garnish with Parmesan cheese.
