Cacciuco (mussel and clam stew)

    cloves garlic, chopped

    homemade tomato sauce (see tips)

    chopped parsley, preferably Italian

    dry white wine
  • salt and milled black pepper
  • 15

    freshly grated Parmesan cheese

    can mussels, drained
  • 290

    can baby clams, drained
 

Method

 
Melt oil and butter in a heavy-based saucepan. Add garlic and sauté until glossy. Add tomato sauce, parsley, wine, pepper and cheese and heat until babbling. Add drained mussels and clams and heat through. Serve on thick slices of bruschetta (see recipe).
