Cabbage baskets

    fairly small cabbage leaves (use the inner leaves)
  • 3
    Russian sausages, sliced into rings
  • oil
  • 1
    onion, coarsely, chopped
  • 1
    green pepper, seeded and diced
  • 2
    tomatoes, skinned and diced
  • 250
    cooked pasta shells
  • salt and black pepper to taste
  • grated Cheddar cheese for sprinkling on top


Preheat the oven to 180 ºC (350 ºF). Boil the cabbage leaves in a little salted water till just tender, but not broken. Drain and line the hollows of muffin tins with the leaves. Fry the sausages in a little oil till lightly browned. Remove from the pan and sauté the onion and green pepper in the same pan till tender. Add the tomato and simmer till soft. Add the sausages and the pasta and mix. Turn the mixture into the cabbage baskets and sprinkle with grated cheese. Heat in the oven till the cheese has melted and the dish is warmed through. Serves 6-8.
