Cabbage and salami

    small cabbage, thinly shredded
  • oil
  • 4
    cooked potatoes, cut into pieces
  • juice of a lemon
  • 125

    salami, sliced and quartered
  • soft and pepper to taste

    butter
  • 25
    ml
    cake flour
  • 250
    ml
    milk
  • 5
    ml
    mustard powder
  • grated Cheddar cheese
 

Method

 
Sauté the cabbage in a little oil till just soft. Add the potatoes and salami and mix. Season with the lemon juice, salt and pepper to taste. Spoon the mixture into an ovenproof dish. Prepare a white sauce: Melt the butter and stir in the cake flour. Slowly stir in the milk till smooth and heat till the mixture comes to the boil and thickens. Stir continuously. Season with mustard powder, salt and pepper to taste. Add a little Cheddar cheese. Pour the white sauce over the cabbage mixture, sprinkle with Cheddar cheese, if desired, and place in a heated oven till the cheese has just melted and the dish is warmed through. Serve with a salad, if desired. Serves 4.
