Cabbage and pecan salad

Ingredients

    cabbage, finely shredded
  • 1
    green pepper, finely sliced into strips
  • 1
    small onion, finely chopped
  • 50

    pecan nuts, coarsely chopped
  • DRESSING
  • 15
    ml
    French mustard
  • 2
    ml
    ground cumin
  • 15
    ml
    apple-cider vinegar
  • 100
    ml
    freshly squeezed orange juice
  • 50
    ml
    sunflower oil
  • 2
    ml
    cumin seeds
 

Method

 
Toss salad ingredients together in a large bowl. To make the dressing, place mustard and ground cumin in a bowl or jug. Add vinegar, a little at a time, and mix in with a fork or whisk. Add orange juice and oil, whisking all the time. Mix in the cumin seeds. Pour over the salad and toss to mix well. Serves 4-6.
