Cabbage and carrot stir-fry with feta cheese

    head cabbage, finely shredded

    large carrots, scraped and coarsely grated

    crushed garlic

    grated ginger (optional)

    ground cumin
  • 5
    ml
    ground coriander

    ml
    turmeric
  • 60
    ml
    chopped fresh coriander
  • 5
    ml
    salt and freshly ground black pepper to taste
  • 15

    olive oil
  • 3
    slices feta cheese, crumbled
  • 4
    rotis
  • 8
    extra coriander sprigs to garnish
 

Method

Mix the cabbage, carrots, garlic, ginger, spices and chopped coriander and season with salt and pepper. Heat the oil in a wok or large frying pan and stir-fry the vegetable mixture over high heat for 4-5 minutes. Stir in the feta cheese and divide the mixture among the 4 rotis. Fold or roll up and garnish with sprigs of fresh coriander.
