Cabbage and carrot salad

    carrots, scraped and coarsely grated

    cabbage, shredded
  • 175

    red onions, peeled and thinly sliced into rings
  • 1
    red chilli, seeded and chopped
  • 8
    mint leaves
  • 2
    lemons, juice and rind
  • 60
    ml
    sunflower seeds
  • 45
    ml
    black mustard seeds
  • 30
    ml
    sesame seeds
  • 60
    ml
    finely chopped fresh coriander
  • salt and freshly ground black pepper
  • extra fresh coriander to garnish
 

Method

 
Mix the vegetables, chilli, mint and lemon juice and rind in a bowl.
Heat the oil and stir-fry the seeds until the mustard seeds begin to pop.
Add the seeds to the vegetable mixture along with the chopped coriander. Mix well.
Season to taste with salt and pepper and garnish with extra coriander.
