Button mushrooms with spicy coating

    breadcrumbs
  • 75
    g
    chopped cashew nuts
  • 5
    ml
    each ground cumin and coriander
  • pinch chilli powder
  • 45
    ml
    chopped fresh coriander
  • 24
    fresh button mushrooms
  • 1
    egg, lightly beaten
 

Method

 
1. Combine the breadcrumbs, nuts, spices and coriander. 2. Coat the mushrooms first in beaten egg and then in the spiced crumbs. 3. Open freeze until solid, then pack into a rigid container. Use within 2 months. TO SERVE: Deep-fry from frozen for 8-10 minutes. Serve with mango chutney for dipping. Makes 24.
