Buttery thyme tomatoes

Serve as a snack or with lamb chops that have been marinated in olive oil.

    ripe tomatoes
  • 4
  • sea salt flakes and freshly ground black pepper
  • 2
    sprigs thyme, leaves removed
  • 4
    thick slices of white toast
Servings: Change Serving



Heat the butter in a frying pan over medium heat. Add the tomato slices to the pan, sprinkle with salt, pepper and thyme leaves and fry, turning once, until softened but holding their shape.

Spoon onto white bread along with any pan juices and eat immediately.
