Butternut soup with caramelised onions

Ingredients (12)

1.00 onion — large, chopped
3.00 garlic — cloves, crushed
45.00 ml butter
500.00 g butternut — peeled and diced
1.00 Litres milk
nutmeg — ground
250.00 ml cream
60.00 ml almonds — flaked, toasted
8.00 fresh sage — sliced
CARAMELISED ONIONS
30.00 ml butter
250.00 g onion — halved
15.00 ml sugar

Method:

Soften onion and garlic in butter in a large saucepan.
Add butternut, milk and nutmeg to taste. Simmer for about 30 minutes.
Process until smooth in a blender. Pour back into pan, stir in cream. Season.
Melt the butter and add onions and sugar. Slowly allow to cook and caramelise.
Reheat soup and serve sprinkled with toasted almonds, sage and caramelised onions.
