Butternut soup with caramelised onions

    large onion, chopped
  • 3
    cloves garlic, crushed
  • 45
    ml
    butter
  • 500
    g
    peeled and diced butternut
  • 1
    Litres
    milk
  • freshly ground nutmeg
  • 250
    ml
    cream
  • 60
    ml
    toasted flaked almonds
  • 8
    sage leaves, sliced
  • CARAMELISED ONIONS
  • 30
    ml
    butter
  • 250
    g
    onions, halved and sliced through root
  • 15
    ml
    sugar
 

Method

40 minutes
 
Soften onion and garlic in butter in a large saucepan. Add butternut, milk and nutmeg to taste. Simmer for about 30 minutes. Process until smooth in a blender. Pour back into pan, stir in cream. Season. Melt the butter and add onions and sugar. Slowly allow to cook and caramelise. Reheat soup and serve sprinkled with toasted almonds, sage and caramelised onions.
