Preheat oven to 180°C.
Coat the butternut in flour and place in an ovenware dish.
Mix sour cream, olive oil, garlic, parsley and seasoning to taste and pour over the butternut.
Bake, covered, in preheated oven for 30 minutes.
Remove lid and bake for a further 30 minutes – 45 minutes until golden.
While the butternut is roasting, heat the oil and butter in a small
pot, add the onions and sugar and simmer gently until the onions are
soft, glossy and caramelised.
Top with caramelised onions and some fresh rocket.
