Butternut, prosciutto and Parmesan salad

Ingredients

  • 1
    butternut
  • 30
    ml
    extra virgin olive oil
  • 5
    ml
    salt
  • 5
    ml
    ground black pepper
  • 5
    ml
    chilli
  • 5
    ml
    ground coriander
  • mixed salad leaves
  • handful of rocket
  • 12
    slices prosciutto ham
  • Parmesan shavings
  • balsamic vinegar
 

Method

90 minutes
 
Preheat oven to 180 °C.
Cut butternut into chunks, keeping seeds intact.
Rub in olive oil and lay in a baking tray.
Sprinkle over mixture of salt, pepper, chilli and coriander.
Roast for 1 1/2 hours.
Scatter salad and rocket on a serving platter.
Add the butternut chunks while they are still warm and top with the prosciutto and Parmesan shavings.
Drizzle with balsamic vinegar.
