Butternut and feta stuffed pita

  • 1
    medium butternut
  • 6
    cloves garlic
  • olive oil
  • salt and milled pepper
  • 2
    discs feta cheese
  • 1
    bunch spring onions
  • 1
    handful Italian parsley
  • balsamic vinegar, salt and milled pepper
  • 2
    pita breads
 

Method

 
Preheat oven to 200 ºC.
Place butternut and garlic cloves in a baking dish.
Drizzle with olive oil and season.
Roast until cooked through, about 25 minutes.
Cool slightly and add crumbled feta, spring onion and parsley.
Drizzle with a little vinegar and season to taste.
Toast pita breads on both sides and stuff with butternut mixture.
