Butternut and apple bake

Ingredients

    g
    butternut, peeled and cubed
  • 385
    g
    pie apples
  • 45
    g
    butter
  • 5
    ml
    mild curry powder
  • 2
    onions, sliced
  • 60
    ml
    cream
  • 85
    ml
    dried breadcrumbs
  • 2
    ml
    ground nutmeg
  • 2
    ml
    ground cinnamon
  • 60
    ml
    melted butter
 

Method

40 minutes
 
Cook butternut in lightly salted, boiling water until just soft. Drain well and place in a greased ovenproof dish. Chop apples and arrange in between butternut cubes. Heat butter and sauté the curry powder and onions until onions are soft. Spoon on top of butternut and apple and spread out evenly. Drizzle cream over. Mix the breadcrumbs, nutmeg and cinnamon together. Mix with butter and crumble over onions. Bake in a preheated 180 ºC oven for 30 minutes or until golden.
