Buttermilk pudding

    ml
    self-raising flour
  • pinch salt

    ml
    butter or margarine
  • 250
    ml
    sugar
  • 4
    extra-large eggs, whisked
  • 1
    Litres
    buttermilk OR 500 ml milk and 500 ml buttermilk
  • 8
    green figs in syrup, halved (optional)
 

Method

50-60 min
 
Preheat the oven to 180 ºC and spray a deep 21 x 30 cm ovenproof dish with non-stick spray or grease lightly with butter or margarine. Sift the self-raising flour and salt. Cream the butter and sugar and beat in the eggs one at a time. Beat in the buttermilk. Add the egg mixture to the flour and beat until smooth. Turn the batter into the prepared dish and bake for about 50-60 minutes until set and golden brown on top. Serve warm with figs and syrup. Serves 8.
