Buttermilk pudding

    butter

    g
    sugar
  • 4
    large eggs
  • 250
    g
    cake flour
  • 2
    ml
    salt
  • 500
    ml
    buttermilk
  • 10
    ml
    baking powder
  • 5
    ml
    grated orange rind
 

Method

30-35 min
 
Preheat oven to 180 ºC. Cream the butter and sugar together. Beat in the eggs until smooth. Sift the flour and salt together and stir into the mixture alternately with the buttermilk. Stir in the baking powder and the orange rind. Pour the batter into a greased ovenproof dish and bake in the oven for 30-35 minutes, until puffed up and slightly browned. Serve immediately with orange preserve. Serves 4-6.
