Buttermilk pudding

    g
    butter
  • 250
    ml
    sugar
  • 4
    eggs, separated
  • 5
    ml
    caramel essence
  • 5
    ml
    vanilla essence
  • 5
    ml
    baking powder
  • 250
    ml
    cake flour
  • pinch salt
  • 2
    x 500 ml buttermilk
  • green fig preserve
 

Method

 
Preheat the oven to 180 °C.
Grease a large, flat ovenproof dish.
Cream the butter and sugar.
Add the egg yolks and beat well.
Add the essences and mix well.
Sift together the baking powder, flour and salt and repeat twice more.
Add the flour mixture to the butter mixture, alternating with the buttermilk. Mix well.
Whisk the egg whites until stiff and fold into the mixture.
Pour the batter into the prepeared dish and bake for 80 minutes or until the edges of the pudding turn pale brown.
Cool and serve with green fig preserve.
