Buttermilk Scones

    cake flour

    baking powder

    salt
  • 30
    ml
    castor sugar
  • 125
    g
    cold butter
  • 1
    large egg
  • 100
    ml
    buttermilk
  • 50
    ml
    water

Oven temperature: 200°C.
1. Sift the flour, baking powder and salt, and add the castor sugar. Rub in the butter with your fingertips until the mixture resembles coarse breadcrumbs.

2. In a separate container, whisk the egg, buttermilk and the water. Make a well in the centre of the flour mixture and pour in the liquid. Mix as lightly as possible to form a soft dough. Press out onto a lightly floured surface. Using a scone cutter, cut into rounds.

3. Place the scones on a greased baking tray and bake in a preheated oven for 10 to 15 minutes until cooked through. Serve with jam or honey and thick cream.
