Butter cream

Ingredients

  • 100
    g
    sugar
  • 3
    large yolks
  • 250
    g
    butter
  • 2
    ml
    vanilla essence
 

Method

10-15 minutes
 
1. Heat the sugar with 90 ml water in a saucepan over low heat until sugar dissolves. Bring to the boil and boil until 'soft ball' stage. (A little of the mixture dropped into a bowl of cold water will form a soft ball.) 2. Beat the egg yolks until just mixed. Gradually pour in the hot syrup, beating continuously. Beat until thick and cool (about five minutes). 3. In a separate bowl, beat the butter and vanilla essence until light. Beat in the cooled sugar mixture. Makes enough to fill and coat a two layer 22 cm cake.
