Butter beans with sausage

Ingredients

  • 250
    g
    bacon, cut into pieces
  • 1
    red or green pepper, chopped
  • 4
    spring onions, chopped
  • 250
    g
    pork cocktail sausages, cut diagonally into thick slices
  • 125
    ml
    water
  • salt and freshly ground black pepper
  • 5
    ml
    cayenne pepper
  • 1
    x 410 g can butter beans
 

Method

20 mins
 
In a large saucepan, fry bacon in its own fat.
Add red pepper, spring onions and sausages and sauté for five to six minutes, until sausages are lightly browned.
Stir in water, salt, black pepper, cayenne pepper and butter beans.
Bring to the boil, then reduce heat, cover and simmer for 10 to 12 minutes.
Serve with Corn bread.
