Butter beans with cheese sauce

    butter
  • 25
    ml
    cake flour
  • 5
    ml
    salt
  • 5
    ml
    white pepper
  • 250
    ml
    chicken stock
  • 410
    g
    2 cans butter beans, drained (410 g each)
  • 15
    ml
    chopped basil
  • 10
    ml
    chopped parsley
  • 30
    ml
    cream
  • 250
    ml
    grated cheddar cheese
 

Method

Preheat the oven to 220°C and grease an ovenproof dish.

Make a white sauce with the butter, flour, salt, pepper and stock.

Add the beans and heat through.

Stir in the basil, parsley, cream and half the cheese and spoon the mixture into the greased dish.

Scatter the remaining cheese on top and bake until the cheese just starts to bubble.

Serve with fresh bread and a green salad.
