Butter bean and brussel sprout curry

    onion, sliced

    each red and green peppers, chopped
  • 1
    clove garlic, crushed
  • 30

    curry paste
  • 5
    ml
    paprika
  • 5
    ml
    coriander
  • 15
    ml
    chopped chives
  • 410
    g
    canned chopped tomatoes
  • 500
    g
    brussel sprouts, trimmed
  • 410
    g
    canned butter beans in tomato sauce
  • salt and pepper to taste
 

Method

 
Heat oil and sauté onion, pepper and garlic until transparent.
Add curry paste, paprika, coriander and tomatoes.
Simmer for five minutes.
Add brussel sprouts, butter beans and seasoning.
Bring to the boil, cover and simmer gently for 30 minutes. Serve over rice.
