Bully beef surprise

Ingredients

  • 125
    g
    bacon, cut into small pieces
  • 2
    cloves garlic, crushed
  • 2
    potatoes, peeled and diced
  • 2
    large ripe tomatoes, skinned and finely chopped
  • 250
    ml
    chicken stock
  • 300
    g
    bully beef, diced
  • 2
    ml
    mixed herbs
  • salt and pepper to taste
  • 4
    slices toast, buttered
 

Method

+/- 30 min
 
Fry the bacon till done but not crisp. Add the garlic and potato and stir-fry for about one minute. Add the tomato and stock, reduce the heat and simmer till the potato is nearly done. Add the remaining ingredients, except the toast. Simmer for about 5 minutes or till the mixture is heated through. Serve with toast fingers. Serves 4.
