Ingredients (11)

240.00 g breadcrumbs — fresh
2.00 onion — finely chopped
oil
680.00 g bully beef — mashed
5.00 ml dried sage
50.00 ml fresh parsley — chopped
Tabasco sauce — a few drops
salt and freshly ground black pepper
2.00 eggs — lightly beaten
75.00 ml milk
4.00 eggs — hard-boiled, shelled

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a 23 x 13 x 7 cm loaf tin with margarine. Sprinkle some of the breadcrumbs in the bottom of the tin. Sauté the onion in a little heated oil until soft. Combine with the bully beef and the rest of the breadcrumbs. Add the seasonings and mix.
Beat the eggs and milk together and add enough of the mixture to the bully beef mixture to bind it well. Spoon half the bully beef mixture into the prepared tin, spreading it evenly. Place the hard-boiled eggs on top. Spoon the remaining bully beef mixture on top and spread evenly. Cover with aluminium foil and bake for about 45 – 60 minutes or until the loaf is done and firm. Cool slightly in the tin before carefully turning out on to a serving platter. Serves 6.
