Bully beef crumble

    onion, finely chopped

    carrots, scraped and sliced into rings

  • large, ripe tomato, peeled and finely chopped

    bully beef, diced

    butter

    ml
    cake flour
  • 125
    ml
    milk
  • salt and pepper
  • TOPPING
  • 125
    ml
    self-raising flour
  • 25
    ml
    butter
  • 30
    ml
    grated Cheddar cheese.
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray an oven dish with non-stick spray. Sauté the onion and carrot in a little oil until soft. Reduce the heat and add the tomato, peas and bully beef. Simmer for a few minutes. Prepare the white sauce: Melt the butter and cake flour, stir until smooth and cook for about 1 minute. Add small quantities of the milk while stirring continuously. Heat until the mixture boils and thickens. Add to the bully beef mixture and mix. Spoon into the prepared oven dish. Mix the self-raising flour and butter. Using your fingertips, rub in the butter until the mixture resembles breadcrumbs. Add the cheese, mix and sprinkle over the bully beef mixture. Bake for 20 minutes, switch on the oven grill and grill until the topping is lightly browned. Serve with a salad. Serves 4.
