Ingredients (11)

300.00 g bully beef — mashed
30.00 ml fresh parsley — finely chopped
salt and freshly ground black pepper
BATTER
75.00 g flour — cake
salt — pinch
1.00 eggs — separated
15.00 ml oil
100.00 ml water
oil — for deep frying
SAUCE
250.00 ml sweet and sour sauce — with pineapple
5.00 cm cucumber — English

Method:

Mix the bully beef and parsley and season with salt and black pepper. Firmly roll the mixture into about 16 balls. For the batter, sift the dry ingredients together. Add the egg yolk, oil and water and blend until smooth. Beat the egg white until soft peaks form and fold into the mixture. Carefully dip the bully beef balls into the batter and fry in deep fat until golden brown. Drain on paper towels.
Heat the sweet and sour sauce. Remove the seeds from the cucumber and cut it into julienne strips. Add the strips to the sauce. Heat until the sauce comes to the boil, then serve it with the bully beef balls. Makes about 16 balls.
