Buffalo chicken wings with blue cheese dip

  • sunflower oil for frying

    Tabasco sauce
  • BLUE CHEESE DIP
  • 125

    sour cream
  • 125

    good quality mayonnaise

    blue cheese
  • 30

    parsley, freshly chopped

    medium-cream sherry

    Worcestershire sauce
 

Method

 
To prepare the chicken, cut each wing into two parts at the joints. Cut off the tips of the wings and discard (or use to make chicken stock). Heat a 5 cm layer of oil in a frying pan and fry half the wings for 10 minutes, or until golden brown. Drain on paper towel. Repeat with remaining wings. BLUE CHEESE DIP: Mix all the ingredients together. To serve, melt butter over a low heat and add the Tabasco sauce. Arrange the hot chicken wings on a platter and drizzle with the melted butter sauce. Serve immediately with blue cheese dip.
