Ingredients (7)

250.00 ml potatoes — cooked, diced
250.00 ml cabbage — chopped
250.00 ml peas — fresh
250.00 ml sweetcorn
3.00 eggs — beaten
2.00 fresh chives — finely chopped
15.00 ml butter

Method:

Place vegetables in a bowl and mix with eggs and chives.
Melt butter in a frying pan and pour in vegetable mixture.
Cook on moderate heat until underside is golden, then cut into quarters and turn.
Cook mixture further until the surface is golden and egg has set.
