Brussels sprouts with bacon

    chicken stock cube, crumbled
  • 250
    ml
    water
  • 20
    Brussel sprouts (large ones, halved)
  • 15
    ml
    oil
  • 8
    rashers back bacon, diced
  • 8
    pickling onions, peeled
  • salt and freshly ground black pepper to taste
 

Method

 
Add the stock cube to the water and bring to the boil in a saucepan.

Add the Brussel sprouts and cook over moderate heat for 3 - 5 minutes or until cooked but still green and firm. Drain and reserve the liquid.

Heat the oil in a pan and fry the bacon and onions until brown.

Add the Brussel sprouts, season with salt and pepper and mix lightly. Spoon the mixture into a serving bowl.
