Bruschetta with goats cheese and fig

Ingredients (6)

1/2 bread — French loaf
2 goat's milk cheese — rolled
1 cream cheese
1 garlic — cloves
4 jam — fig
1 rocket — small bunch

Method:

Preheat oven to 160 C.
Slice the French loaf at an angle and place on a baking tray, brush with the olive oil.
Place in the oven for about 5-10 mins until golden.
Grate the garlic clove on the small eye of the grater.
In a bowl, combine the cream cheese with the goats cheese and the garlic and season well with black pepper and salt.
To make up the bruschettas:
Spread a generous amount of the cheese mixture onto the bruschettas and top with the fig jam.
Just before serving, place them into the oven to warm (1-2 minutes) and serve with the fresh rocket.
