    cherry tomatoes, halved

    sugar for sprinkling
  • 1
    loaf
    ciabatta loaf, cut diagonally into about 8 slices
  • 50

    olive oil
  • 125
    g
    Camembert cheese, cut into 8 wedges
  • 150
    g
    Black Forest ham slices, halved
  • 20
    leaves
    fresh rocket leaves, stems removed
  • 4
    ml
    salt and freshly ground black pepper to taste
 

Method

Preheat the grill. Sprinkle the tomato halves with the sugar and grill the tomatoes until the sugar begins to caramelise. Or use a blowtorch to do the job.

Drizzle the slices of bread with the olive oil and toast until pale brown. Wrap each wedge of Camembert in a slice of ham.

Place the rocket leaves on the slices of toast (bruschetta) and place the wrapped cheese on top, followed by the caramelised tomato. Season with salt and pepper to taste.
