Bruschetta ai funghi

    ml
    unsalted butter
  • 15
    ml
    virgin olive oil
  • 45
    ml
    fresh sage
  • 1
    kg
    assorted mushrooms, wild if possible
  • 45
    ml
    chopped parsley
  • salt and milled black pepper
 

Method

 
Heat oil and butter and sauté sage leaves for 2 minutes. Add mushrooms and sauté until cooked. Add parsley, salt and pepper and serve on warm bruschetta (see recipe).
