    extra-large eggs
  • 100
    ml
    milk
  • salt and freshly ground black pepper
  • 250
    g
    bacon, shredded
  • 1
    onion, thinly sliced
  • 1
    tomato, seeded and chopped
  • 1
    green pepper, chopped
  • 200
    g
    mushrooms, shredded
  • 375
    ml
    grated cheese
  • paprika
 

Method

 
Preheat oven to 180 °C and grease 3 ovenproof plates.
Whisk the eggs and milk together and season.
Fry the bacon, onion, tomato, green pepper and mushrooms until done and spoon onto the plates.
Pour the egg mixture on top and bake for 25 minutes until firm.
Scatter the cheese on top and sprinkle with the paprika.
Bake for another 5 to 10 minutes until the cheese has melted.
Grill until golden brown and serve.
