Brown sugar meringues

    ml
    light brown sugar
  • 4
    egg whites
  • 15
    ml
    cornflour
  • 5
    ml
    white vinegar
  • silver balls
  • GANACHE
  • 100
    g
    white or brown chocolate, broken into squares
  • 60
    ml
    cream
 

Method

 
Preheat oven to 100 °C.
Line baking sheets with baking paper and dust with cornflour.
Process the brown sugar in a food processor until fine.
Beat the egg whites until soft peaks form, add the sugar by the spoonful and beat until thick and shiny.
Fold in the cornflour and vinegar using a metal spoon.
Pipe rosettes of the mixture on the baking sheets.
Sprinkle the meringues with silve balls and bake for 40 minutes.
Switch off the oven and leave the meringues to dry out in the oven.

Melt the chocolate with the cream in the microwave oven until smooth.
Add the butter and beat until smooth.
Sandwich the meringues together with the ganache and store in an airtight container.
