    uncooked brown rice

    vegetable stock
  • 200
    g
    stuffed green olives, sliced
  • 2
    hard-;boiled eggs, chopped
  • 1
    green pepper, seeded and diced
  • 1
    small onion, finely chopped
  • 1
    green chilli, seeded and finely chopped (optional)
  • salt and freshly ground black pepper
  • PAPRIKA SALAD DRESSING
  • 30
    ml
    fresh lemon juice
  • 15
    ml
    apple cider vinegar
  • 2
    ml
    salt
  • 45
    ml
    olive oil
  • 45
    ml
    sunflower oil
  • 1
    clove garlic, crushed
  • 2
    ml
    paprika
 

Method

 
Rinse the rice and boil in the stock until cooked. Drain if necessary and mix with the remaining salad ingredients. Season to taste with salt and pepper. Blend all the ingredients for the salad dressing and pour over the lukewarm rice mixture. Chill for at least three hours to allow the flavours to develop. Serve chilled.
