Brown rice, nut and sun-dried tomato salad

    ml
    uncooked brown rice
  • 90
    ml
    olive oil
  • 30
    ml
    red wine vinegar
  • salt and freshly ground black pepper
  • 200
    g
    mixed nuts, coarsely chopped
  • 200
    g
    sun-dried tomatoes in vinaigrette, chopped
 

Method

 
Cook the rice until done, drain and set aside.
Make a dressing by mixing the oil and vinegar and season with salt and freshly ground black pepper.
Lightly mix the rice with the nuts and sun-dried tomatoes and moisten with the dressing.
Serve as a side dish.
