Brown onion sauce

    ml
    butter
  • 2
    onions, chopped or sliced
  • 20
    ml
    cake flour
  • 300
    ml
    good-quality meat stock
  • 30
    ml
    dry sherry or port (optional)
  • 2
    ml
    sugar
  • 10
    ml
    tomato purée
 

Method

 
Heat the butter and add the onions. Cook over a low heat until onions turn golden brown.
Stir in the cake flour and gradually add the stock. Stir until thickened, then stir in the sherry or port if using, the sugar and tomato puré.
Serve with meat, vegetables, sausages and pies, and add to a stew for extra richness.
