Brown mushroom, sausage and spinach penne

    brown mushrooms
  • 45
    ml
    butter, melted
  • 30
    ml
    olive oil
  • 4
    garlic cloves, crushed
  • 4
    chorizo sausages, sliced
  • 500
    ml
    cream
  • 1
    Litres
    baby spinach, washed
  • 500
    g
    penne, cooked al dente
  • salt to taste
  • freshly ground black pepper
  • Parmesan cheese, grated
 

Method

 
Place the mushrooms on a baking tray and drizzle over half of the butter and olive oil.
Pop under a hot grill and cook until soft - about 3 minutes.
Heat the rest of the butter and oil in a pan, add the garlic and sausages, and cook for a minute and add the cream.
Wilt in the spinach and season.
Mix in the cooked penne, adjust seasoning and spoon into pasta bowls.
Top with mushrooms and Parmesan.
