Ingredients (3)

2.00 bread — brown, sliced
50.00 g coconut — roasted
25.00 g apricots — dried, chopped

Method:

1. Put the brown bread into a food processor or press through a sieve until you have fine crumbs. Place on a baking tray in a preheated oven at 200 ºC until crumbs are lightly browned.
2. Mix roasted coconut, 50 g breadcrumbs and apricots together.
3. Mix into basic vanilla ice cream and freeze.
