    corn flakes

    melted butter

    apple slices
  • 125
    ml
    soft brown sugar
  • 10
    ml
    ground cinnamon
  • 1
    lemon (rind only)
  • 1
    juice of a whole lemon
  • 250
    ml
    hot water
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine. Mix the corn flakes with the melted butter and sprinkle half the mixture into the bottom of the dish. Arrange half the apple slices on top. Mix the brown sugar and cinnamon and sprinkle the apple slices with half the mixture. Arrange the remaining apple slices on top and sprinkle with the remaining brown sugar mixture. Sprinkle the remaining corn flakes mixture on top. Mix the lemon rind and juice with the water and pour over the pudding. Bake for about 40 minutes or until the apple slices are tender. (Cover the pudding if the corn flake mixture browns too quickly.) Serve with cream or custard. Serves 6.
