Brookdale beans with minty yoghurt dressing

    green beans
  • 2
    cloves garlic, crushed
  • 30
    ml
    olive oil
  • 15
    ml
    white vinegar
  • 4
    spring onions, chopped
  • 1
    red pepper, seeded and sliced into thin strips
  • DRESSING
  • 170
    ml
    natural yoghurt
  • 30
    ml
    fresh mint
  • 2
    ml
    paprika
  • 2
    ml
    grated lemon peel
  • 10
    ml
    lime juice
  • 10
    ml
    honey
 

Method

 
Place beans in rapidly boiling water. Cook, uncovered, for 5 minutes. Rinse, then refresh in cold water to set colour. Combine garlic, oil, vinegar and spring onions and pour over green beans. Chill. DRESSING: Combine ingredients, pour over beans and red pepper and toss lightly. TOTAL KILOJOULE COUNT: 2 505 kJ (600 Cal). A portion: 500 kJ (120 Cal).
