Broccoli and mushroom salad

  • 800
    g
    broccoli, broken into florets
  • 250
    g
    fresh mushrooms, sliced
  • 5
    spring onions, chopped
  • 4
    celery stalks, sliced into rings
  • SALAD DRESSING
  • 75
    ml
    sugar
  • 150
    ml
    grape vinegar
  • 5
    ml
    paprika
  • 250
    ml
    light salad oil
  • salt and freshly ground black pepper
 

Method

 
Blanch the broccoli for a minute in boiling water. Drain, rinse under cold running water and mix with the mushrooms, spring onions and celery. Whisk together all the ingredients for the salad dressing and pour over the salad. Spoon into a plastic or glass bowl, cover and marinate for at least an hour in the fridge before serving. Serves 4-6.
