Ingredients (9)

800.00 g broccoli — broken into florets
250.00 g mushrooms — sliced
5.00 spring onion — chopped
4.00 celery stalks — sliced
SALAD DRESSING
75.00 ml sugar
150.00 ml vinegar — grape
5.00 ml paprika
250.00 ml oil — light
sea salt and freshly ground black pepper

Method:

Blanch the broccoli for a minute in boiling water. Drain, rinse under cold running water and mix with the mushrooms, spring onions and celery. Whisk together all the ingredients for the salad dressing and pour over the salad. Spoon into a plastic or glass bowl, cover and marinate for at least an hour in the fridge before serving.
Serves 4-6.
