Brioche with smoked mackerel, watercress and cucumber

  • butter
  • 6
    brioche
  • cucumber, grated
  • 50
    g
    watercress or lettuce leaves, finely chopped
  • 100
    ml
    plain yoghurt
  • 2
    smoked mackerel fillets, flaked
  • salt and freshly ground black pepper
 

Method

 
Cut each brioche in half across the top crust, but do not slice through all the way. Mix the cucumber, watercress, yoghurt and mackerel in a mixing bowl. Season with salt and black pepper to taste. Fill each brioche with the filling. Makes 6 rolls.
