    sugar
  • 100

    olive oil

    fresh parsley, finely chopped
  • 4
    spring onions, finely chopped
  • SALAD
  • 65
    ml
    sunflower oil
  • 65
    ml
    olive oil
  • 45
    ml
    water
  • 2
    ml
    dry basil
  • 600
    g
    baby aubergines, sliced into rings
  • lettuce leaves, rinsed
  • 3
    tomatoes, sliced into rings
  • 250
    ml
    low-fat cheese (Edam), diced
  • freshly ground black pepper
 

Method

 
Blend all the salad dressing ingredients and set aside. Switch on the oven grill. Blend the oils, water and basil. Pour the mixture into an oven pan and arrange the brinjal slices in the pan. Place under the heated oven grill and grill until golden brown and tender. Turn while grilling. Cool. Arrange the lettuce leaves in a serving dish and arrange the brinjal and tomato slices on top. Sprinkle the diced cheese on top and season with black pepper. Moisten with the salad dressing. Serve with bread rolls. Serves 6.
