Brinjal pâté with toasted pita breads

Ingredients

    kg
    brinjals, peeled and cut into cubes
  • 80
    ml
    olive oil
  • 2
    cloves garlic, crushed
  • 5
    ml
    paprika
  • 2
    ml
    ground ginger
  • 3
    pita breads
  • 1
    egg white
  • 30
    ml
    cumin seeds
 

Method

30 minutes
 
Steam the brinjals over a pot of simmering water for 20 minutes or until soft. Drain well.
Heat the olive oil in a large pot and add thebrinjals, garlic, paprika and ginger.
Stir over a medium heat for about 10 minutes or until thebrinjal is very soft. Season to taste and serve hot with toasted pita breads.
PITA BREAD: Split each pita into two rounds.
Brush with egg white and sprinkle with cumin seeds.
Bake in a preheated 200 °C oven for 10 minutes or until the bread is crisp.
