Brinjal and pepper with blue cheese

    Blue Cheese Dressing: blue cheese, crumbled
  • 75
    ml
    buttermilk
  • 15
    ml
    milk
  • 5
    ml
    salt and freshly ground black pepper to taste

    Wraps: young brinjals, thinly sliced lengthways
  • 2
    yellow peppers, seeded and cut into thick strips
  • 20
    ml
    light olive oil
  • 4
    rotis or tortillas
  • 40
    ml
    pumpkin seeds, roasted
  • 1
    handful
    baby spinach leaves, shredded

Dressing Place the blue cheese in a small mixing bowl and mash with a fork. Add the remaining ingredients and mix well.

Wraps Brush the brinjal and pepper slices all over with the olive oil. Heat a griddle pan over high heat and grill the brinjal and pepper slices on both sides, in batches, until browned. Divide the vegetables among the 4 rotis and sprinkle the pumpkin seeds and spinach on top. Moisten with a little of the dressing and roll or fold up. The dressing may also be served separately.
