Brinjal and mozzarella mini-loaves

    large aubergine

    onion, cut into wedges
  • 1
    tomato, cut into thick slices

    mozzarella cheese, sliced
  • 2
    thick slices flavoured bread of your choice, lightly toasted


Switch on the oven grill. Spray a baking sheet with non-stick spray. Slice the brinjal into 1 cm-thick slices lengthwise. Blend the olive oil and lemon juice and brush over the brinjal slices. Season with freshly ground black pepper. Place on the baking sheet with the onion and tomato and grill for about 6 minutes. Remove the tomato and onion, turn the brinjal slices and grill on the other side, also for about 6 minutes or until golden brown. Place the slices of mozzarella cheese on top of the brinjal and grill until the cheese has melted. Transfer the brinjal slices to the toasted bread and top with the onion and tomato. Serve hot with a salad. Serves 1-2.
