    brinjas
  • 45
    ml
    olive oil
  • 4
    garlic
  • 6
    black olives
  • 45
    ml
    basil
  • 2
    tomatoes
 

Method

Leave the brinjal cubes to stand in a colander for fifteen minutes, then rinse and pat dry with a clean cloth.

Heat the olive oil in a saucepan over a medium heat and fry the brinjal for three minutes.
Add the garlic slices and continue to fry until the brinjal cubes are soft.

Transfer the mixture to a food processor and blend until it is still slightly chunky.
Stir in the remaining ingredients and season to taste with salt and freshly ground black pepper.
