Mojito-marinated chicken with limes

    light rum
  • 125

    finely chopped fresh mint

    honey
  • 15

    olive oil

    limes, halved lengthwise
  • fresh mint, to garnish

Preheat the oven to 180ºC.

Whisk the lime juice, 100ml of the rum and the mint, honey and oil together. Place the chicken pieces in a bowl and cover with the marinade. Cover and marinate in the fridge for about four hours, stirring once or twice.

Place the lime halves in a bowl. Pour the remaining rum over them and toss to coat. Leave to stand at room temperature for an hour.

Transfer the chicken and limes to a greased roasting pan. Roast in a preheated over for approximately 30 minutes or until cooked. Serve the roasted chicken and limes on a platter and garnish with fresh mint.
